As Chef Director of the Diamond Club, Raymond brings his lifelong passion for creative menus, seamless service and quality ingredients to the club.
Located at the Emirates Stadium in north London, the Diamond Club was designed to be one of the finest places to watch football in the country.
The vision was to capture and contemporise Highbury’s Art Deco feel with a space comprising of an open-plan restaurant, private dining booths, armchair lounge and a back-lit onyx bar. And one must not forget the outdoor reserved seating area with leather armchairs, heated seats and pitch-perfect views.
A bespoke à-la-carte menu is available every matchday, with a team led by Raymond Blanc protégé Thomas Fairhall. Trained at Le Manoir aux Quat’Saisons, Thomas shares Raymond’s passion for providing beautiful cuisine using only the finest ingredients. As Head Chef of the Diamond Club, Thomas is responsible for bringing Raymond’s vision to life each matchday, including shared passions around provenance and sustainability.
In fact, the Diamond Club proudly became the first sports stadium restaurant to be awarded the coveted Three Stars by the Sustainable Restaurant Association – the highest star rating available.
