Raymond Blanc is Guest Editor of The Caterer
The Caterer is the leading trade publication for the Hotel and Restaurant industry. For the issue published on 18 May, Raymond Blanc OBE, is taking on the role of Guest Editor.
The issue focuses on the legacy of Raymond Blanc's work at Le Manoir: the chefs he has trained, what they have gone on to achieve elsewhere, and how Le Manoir is approaching the challenge of providing sustainable luxury.
On Monday 14 May, Raymond Blanc spent the day at the offices of The Caterer, where he took on the role of Guest Editor for the edition of the trade magazine for the hotel and catering industry.
Under his editorship, the magazine looked at the work of Le Manoir aux Quat'Saisons in its quest to provide guests with "sustainable luxury". Raymond looked at how his former protégés in the kitchens of Le Manoir have fared when they have started their own ventures both in the UK and abroad.
As part of his editorship, Raymond commissioned Caterer and Hotelkeeper to run a survey, in association with Acquire Services, to find out which sectors of the hospitality industry are doing the most to serve food which has the least impact on the planet.
“Running a sustainable restaurant and hotel is my passion,” Blanc explained. “I am fascinated to find out how widespread ethical practices are across every level of the hospitality industry. I urge everyone to take part in this survey to find out what the true picture is throughout the UK.”
