BBC Series: Kitchen Secrets
Raymond Blanc will be taking part in a life Q&A session on Times Online on Tuesday 16 February.
In episode one of BBC2's Kitchen Secrets Raymond will focus on chocolate and show viewers how to make Maman Blanc’s Chocolate Mousse in ten minutes using just three main ingredients: 70 per cent chocolate, egg whites, lemon and a little sugar. Delicious.
Blanc is both a home cook and a chef and has the rare skill of being able to demonstrate how to make quality food without it looking too daunting.
He served his apprenticeship in his mother's kitchen, learning how to cook simple and wholesome food from scratch. And yet he oversees, with exacting standards, one of the country's best known hotel restaurants, Le Manoir aux Quat’Saisons.
On Pancake Day Blanc join the Times Online to answer readers' questions not only about whether to flip your pancake or not and whether a savoury or sweet filling is best but readers can mine his professional knowledge on creative techniques - perhaps your sauce splits or soufflé collapses - or ask le chef how to pick the best seasonal produce.
