A new challenge in Provence

Hello friends

I’m writing this blog at 1.45 in the morning after a long day talking and planning for our first event tomorrow. 


Tomorrow we are going to cook for between 20 and 30 guests, creating a menu which is all about a region – this time, Provence. Small producers, local fish, bustling markets… We are preparing a feast for our Provençal guests, celebrating their own region, their own produce, their beautiful country. We are working in a kitchen we’ve never used before: it is so tiny that it reminds me of my first kitchen at Les Quat’Saisons.


My two trainees, Katie and Kush, have made me so proud: they have worked SO hard, taken initiatives, and made this little kitchen our own. I must send huge thanks to Gary (my executive head chef at Le Manoir) for having done such a great job training them both!


After tonight, I will let you know if it was a triumph – or an abject failure! Pray that there is no storm tonight, so that we get the best fish, and plenty of choice!
